Slow Cooker Pot Roast

2-3 lb beef roast
1 bag small red potatoes (about 1 inch in diameter)
1 bag of baby carrots
1 medium onion sliced into 1 inch chunks
1 c water
1 Tbsp. pepper
1 tsp. salt
1 Tbsp. minced garlic

Cut roast into 4 equal parts. Place all ingredients into crock pot and place on high for 5 hours or low for 8-10 hours.

Easy As Shepard’s Pie

½ bag frozen peas ( about 4 ounces)
½ bag frozen corn kernels
1 package diced onion ( about 2 ounces)
1 lb lean ground beef
1tsp. salt
1Tbsp. pepper
1 package pre-made mashed potatoes from refrigerated section of grocery store.

Sauté beef in large skillet until brown. Drain excess water, leaving a few tablespoons. Add frozen vegetables, salt and pepper. Transfer meat mixture to a 2qt baking dish.

Open mashed potato package and stir. Top meat mixture with mashed potatoes and spread as evenly as possible. Place 4-6 slices of provolone cheese on top of potatoes. Bake for 20 minutes at 350 degrees.

Simple Shrimp Penne

1 lb frozen shrimp- peeled, no tails
½ lb Penne pasta (half the box)
½ bag frozen peas (about 4 ounces)
1 Tbsp. minced garlic
1-2 Tbsp. garlic and basil pesto
1 Tbsp. butter or olive oil
Salt and pepper to taste

Prepare the pasta according to the package. While the pasta is boiling, sauté all other ingredients in large skillet 5-8 minutes. Add cooked pasta to skillet. Toss together and serve.
